Estofado de Alubias

Ingredients

  • 1/2 kg. of white bean cassoulet
  • paprika
  • 1 onion and 1/2
  • 2 cloves garlic
  • Extra virgin olive oil
  • Fennel
  • Rosemary
  • Thyme
  • Laurel
  • 5 black peppercorns
  • 5 Strands Saffron
  • Cognac
  • Salt

The meat

  • Piglet 250gr
  • 250gr deer
  • 3 sprigs thyme
  • 2 rosemary branches
  • 2 bay leaves
  • 2 cloves garlic
  • 50 ml white wine
  • virgin olive oil
  • 100 ml water
